Cheesy Black Bean Quesadillas

Yummy :) 
This delicious dinner is so easy to make! 

Ingredients:
- 3 whole wheat tortillas
- Cheese
- Chicken (if desired)
- 1/2 can black beans
- tbsp (ish) of cilantro
- Zest and juice of one lime
- 1/2 tbsp of oregano
- tsp of salt

Steps:

Mix cilantro, black beans (drained and rinsed), lime juice & zest, oregano, and salt in food processor. 


Spread black bean mixture on half of tortillas. Add chicken and cheese. Fold in half and place on baking sheet. 
Bake at 400F for 5 minutes on each side. 


Prepare guacamole, sour cream, and salsa for toppings.


Enjoy!!


We've made this a few times. It only takes about 25 minutes to prepare and bake. 
Well worth it!
