Mr. A and I bought some Kale to make some more delicious Kale Chips.
Fortunately, we had a LOT of Kale left over in our bunch, so I found a delicious recipe for a soup.
VERY easy to make.
Ingredients:
8 cups loosely packed kale, olive oil, 1 chopped onion, 2 cans of cannellini white beans (drained and rinsed), 4 cups water, vegetable stock, salt, pepper, country bread and parmesan cheese.
Steps:
1. Cut or tear the kale into 1/2 inch pieces. In a saucepan heat oil. Add onion and cook until softened (about 5 minutes)
2. Add about half of the beans and lightly mash them with a fork (or masher like I used!). Add water and vegetable stock and bring to a boil. Stir in kale, remaining beans, salt & pepper to taste. Reduce heat and simmer until kale is tender (around 20 minutes)
3. Toast bread. Ladle soup into bowls and top with toast. Drizzle olive oil and sprinkle parmesan on top
4. Share with someone you love!
